There's just something about the way they say it and the situation (me sitting in shadows watching them poke around to try and find me) that makes it very very funny. :) The guards just make me laugh with a lot of what they say. I just found the drunk guards hilarious, especially combined with how they stagger about. this looks safe!' :D The defiant shouting he did when he pissed off the Sphere was great aswell.
:D Also, some guards do these funny self conscious 'I know you're coming, I'm just waiting here' coughs that made me piss myself.
They're buggers to kill because you can only hit them when they dive, so I lol'd when Claw muttered 'Bloody birds!' when going across a rooftop in one level. *Claw: There's these annoying seagull enemies that dash down and hit you. I'm sure everyone must have some favourites - funny things that characters said, quips that were very timely, or maybe just lines that formed part of a memorable experience.
